Click Here for the matzo ball soup and mint jelly recipes.Lee Lee’s Great Grammy’s Matzo Ball SoupINGREDIENTS FOR SOUP: Whole (3-4 pounds) Empire chicken (the best - but any fresh chicken will do) Medium turnip quartered Four medium onions quartered Six celery ribs coarsely chopped/large dice Twelve (not 11, not 13) parsley stems Three large carrots quartered Eight peppercorns, crush Two sprigs fresh thyme Kosher salt to taste PREPARATION:Clean the chicken and discard giblets and salt cavity and outer skinLet it sit for about a half an hourWash salt off and place chicken in a medium to large stockpotAdd with turnip, onion, celery, parsley, carrots, peppercorns thymeCover with 4 or 5 quarts of cold water.... skimmed chicken fat from the stock (schmaltz) Two tbsp finely chopped parsley Kosher salt and fresh black pepper to taste One cup matzo meal PREPARATION:Whisk the eggs until blendedAdd the club soda, chicken fat salt and pepperBlend in the parsley and matzo meal.Cover and refrigerate the mixture for about 1 hour.... Rub vegetable oil on hands and form matzo balls with about two tablespoons of mixture.Drop in the soup and simmer covered and DON’T EVER PEEK (I’m told this is the secret, but I don’t 100 percent believe it because my balls never come out nearly as good and she always peeks) Garnish the soup with freshly chopped dill and serveFRESH MINT JELLY Ingredients: 1-1/2 cups fresh mint 2 tablespoons lemon juice 1/2 cup sugar 1/2 bottle Pectin† PREPARATION:Rinse the mint Place in a bowls and coarselychop with a mezzaluna or a Chefs knifeAdd 2-1/4 cups of water and bring to a boil over high heatRemove from the heat, cover and let stand for 10 minutes.Add the lemon juice and the sugarMix well....
