For me, Thanksgiving is rarely about the turkey. In fact, I'd go so far as to say that the turkey is generally a let-down.
What I care about is the side dishes. Historically, my Thanksgiving dinner plate has a few slices of turkey and heaps of sides—several of which I end up going back for at least once. Whether it's the mashed potatoes or the glazed carrots or my grandmother's special peach Jell-O concoction (and I usually hate Jell-O), I can't help but overlook the turkey in favor of the other foodstuffs on the table.
And so today's Foodsday Tuesday is dedicated to the unsung heroes of Thanksgiving: the sides. Where a normal dinner usually has one or two of them, Thanksgiving dinner can have six or seven, and Phillyist thinks they all deserve respect. Leave a comment and let us know what Thanksgiving sides you think deserve a special shout-out.

I load up on stuffing, assuming it's done properly (i.e. cooked inside the bird; none of that stove-top bs).
I made this Cranberry-Ginger relish last year and it was a bit hit. I might just have to repeat it again this year.
To Ross I say, "Bah." I LOVE Stove Top stuffing.
Stove-top is all well and good for an average dinner, but for Thanksgiving, no way.
Stuffing (cooked in the turkey) is a sure fire way of ruining your bird because you have to cook the turkey too long to cook the stuffing. There are a ton of non-Stove Top recipes for dressing that are probably more delicious than Stove Top. You can always stuff it in the bird for presentation purposes if you really need to.
If you put some the stuffing between the meat and the skin, so that you're not cramming it all into the cavity, that will keep the meat moist, and also keep the cooking time down.
I can attest that the cranberry-ginger relish was outstanding.
And i have no comment on stuffing, as I am not a fan. I'll save the room for more mashed potatoes.
This is one of my favorite ideas for a sidedish, cheesesteak stuffing.

One of these years I'm gonna try it.
