Foodsday Tuesday: Not Your Grandmother's Cucumber Sandwiches

cucumber.jpgMaybe it's us, but the idea of buttered crustless white bread topped with cucumbers has never been appealing. But we do love cucumbers, and occasionally, we've been known to have tea parties, so clearly, some kind of cucumber sandwich is in order at times. This Mediterranean spin on the teatime favorite is sure to please any guests who, like us, have an aversion to buttered cucumber slices.

Mediterranean Cucumber Tea Sandwiches
One bag mini pita rounds (available at Trader Joe's), or lavash, cut into 1.5-inch squares
One container dill-flavored hummus (or plain hummus blended with fresh dill)
Two large cucumbers, peeled and sliced into quarter-inch rounds
Additional dill for garnish

Cut top third off of pita round (if you're using them). Stuff rounds with just under a tablespoon of hummus, or spread that amount onto two lavash squares. Insert one cucumber slice into each round, so that it sticks out slightly, or place a slice on one lavash square, then top the other. Arrange on plate and sprinkle additional dill over sandwiches as desired. Serve immediately.

There you have it, folks! A quick and easy tea or cocktail treat that's sure to prove more popular than your grandmother's cucumber sandwiches. (Unless your grandmother is accustomed to serving real English tea. In England. In which case, we apologize for inadvertently insulting her.)
