
While we are well aware the current weather is a tad too hot for a picnic, we can still plan for one, so Phillyist uses its counter space this week to whip up some tapenade in a Cuisinart.
Tapenade, a classic French combination of olives, capers (the French word for caper is tapen) and anchovies, has been an integral part of Provencal food for centuries; fusing the produce of the sea and land within that region. It makes a lovely accompaniment slathered on pretty much anything and everything, but is especially sublime on a ficelle with jersey tomato (which are in an early season because of the heat and in abundance right now), fresh basil and smoked mozzarella from Dibruno.
Due to their sturdiness from the bread, these healthy bites travel very well to the beach or the park but also make a fantastic and easy indoor dinner. Just pair with a simple salad, a crisp pinot grigio or chilled sauvignon blanc (although tapenade is French, don’t forget the ingredients reflect the red, white and green colors of the Italian flag so don’t be partial where booze is concerned) and some stewed fresh berries over vanilla bean ice cream for dessert.
